Quick Recipe: Spicy Citrus Shrimp Scampi & Angel-Hair Pasta

I LOVE angel-hair pasta (but only like small shrimp) and make my scampi and angel hair dish with lots of small shrimp.

That doesn’t mean you can’t make it with JUMBO shrimp, right.

Well if that be you? Have at this awesome, recipe. And like me, for us small shrimp lovers, in place of “12 Jumbo Shrimp,” give the small guys a chance. It’s DELISH!

Angel Hair Pasta with Spicy Jumbo Shrimp Scampi & Citrus Crumbs

½ lb. fresh angel hair
12 jumbo shrimp
1 tbsp. chopped garlic
1 cup dry white wine
½ cup diced onions
¼ cup fresh lemon juice
3 tbsp. unsalted butter
Sea salt
¼ cup chopped chives
¼ cup chopped parsley
3 Red Fresno chilis (julienned)

Citrus Crumbs

3 cups panko bread crumbs
¼ cup olive oil
¼ lb. unsalted butter
Salt and pepper to taste
Zest of 2 lemons, 2 oranges and 2 limes

Place a large rondeaux on stove on medium. Add olive oil and butter. When butter foams, add bread crumbs and stir with rubber spatula around pot for 10 minutes. You will gradually see crumbs turning golden brown (if pan is smoking, lower heat). To keep an even toas (cont’d)
